Will the layout stay the same?

Text, headings, lists, tables and pictures are kept. Very complex layouts (text boxes, unusual fonts, columns) can shift slightly, because every word processor lays out pages a little differently – check the result before you send it.

Does this work with scanned documents?

Only if the file contains real text. A scan is just pictures of pages: convert it with “OCR PDF” first so the text can be recognised, then convert the result.
